Hollow out the onions, fill with a mixture of Italian sausage, mushrooms, bell peppers, jalapeno, and squash. Fill the onion fully. Then wrap with bacon. I smoked them on my pellet grill for 45 minutes on high smoke, then finished then at 300degrees until the meat hit 165. Then topped with cheese.
As an appetizer i took some of the extra onion and wrapped them with bacon (think onion rings) they were pretty good too
