Mold growing

There is mold growing throughout the substrate, do I need to replace it all or can I leave it alone unless it starts growing on the surface? I would replace it right now, but I would need at least four bags of substrate, and she finally took to her hide. I over-moistened the substrate a bit, because I was seeing signs of dehydration and panicked. I added a second water dish and it seemed to solve it, but now I have mold growing underneath after I had manually moistened areas.

Let's get this straight you have two 1.5 DLS spoods in 12*12 enclosures and mold is throughout...top to bottom....yellow or white....or both?
It's white, maybe 25-40% of the way deep underground has some of it, some of it looks a bit stringy and the other bit just looks like typical mold. None of it is anywhere near the surface. I have one spider in a 12" enclosure which is the one that has an issue. It does have very good cross ventilation, she was constantly favoring the water dish and I assumed it was due to a moisture issue because of the ventilation being so good and I over-did it a bit in the corners out of fear. She's been very weird compared to my other spiders and its made it difficult to figure out what was wrong, which lead to a bit of my "experimentation".

Once I added a second water dish, things seemed to improve for her. Now I have this mold issue that I caused from past over-watering.

The reason she was never using her hide was apparently from what I believe was due to moisture, which is why she moved into it once I had the second water dish in the Tarantula Crib.

I've had to try three different substrates and two substrate mixes until I finally found something she liked, and that's another reason I don't want to switch it out again. She seems to be a very picky spider.
