Switched substrate for 1.30" DLS G. Pulchra and it's a little "moist" to the touch, can I avoid over-flowing the water dish for now?

Make sure the sub is dry. Other than that at that size your GBB should settle in well.

Yep , shouldn't be a problem at all. Mine likes it on the dry side anyway, that's just something I do to raise humidity when needed.
