So this Christmas I am looking into maybe adopting a new tarantula. I want something very pretty but also hardy and definitely docile. Any recommendations?

Any Brachypelma, boemhei , smithi, emilia, baumgarteni, those are all pretty spiders and generally known to be docile. All spiders are individuals though

Exactly what MassExodus said and my own addition og Grammostola pulchripes, the Chaco Golden Knee. Big, beautiful, striking, and everyone I've kept has been docile. If you want some thing colourful I'd recommend Dolichothele diamentinensis (formerly Oligoxystre diamentinesis). They're similar in looks to a GBB but not so big, great webbers but almost always on view.
All T's have their own personality, so it may be docile until it molts, then become a venom dripping OBT on steriods type, then may switch back to being a kitten the next molt.
For colors i prefer the reds in the Brachypelma species, my favorite is the Boehmei with the full red legs, emilia are nice, with a darker red on their legs but not fully colored like the boehmei. The smithi is always a favorite for beginner with the red and orange. If you like hte red rumps my favorite is the b. vagans. That's the largest of the brachypelma (IIRC) and not always docile. Mine can be handled once it's removed from it's enclosure, but in the enclosure it's defensive. None of them are aggressive.
If you want more color though, i'd go with a GBB. Easy to raise, very good eaters, always out in view, web up everything (but i think that's really cool), and the colors are gorgeous - blue legs, green carapace, and orange abdomen from juvie to adult. Slings have yellow legs with the green and orange, and their legs turn blue when they reach an inch or so leg span.
Seems like that 1" mark is when most T's starts showing their adult colors.

I like them, too, but quite an investment in money and time to maturity.
Mine is quite aggressive
anything that goes into his enclosure is food lol. He's totally opposite in attitude from all my other Brachy's, when we last rehoused him a few weeks back he tried biting my son's thumb, luckily for him the catch cup got in the way I named him Thug before i got him, he's making the name fit
