Sorry for chiming in so late @BrokenRay ! 1) I'll second PanzoN88 here. Not sure on the sub adult / adult growth rate but they are the t that I've personally seen the most growth. I got Dozer in May at 1/2" dls. He grew like a weed up to about 2 inches. At one point he sealed off his burrow and let his tunnels collapse for 2 months. Came out at least twice the size. I suspect a double moult but can't confirm. Now he's probably 2.5 - 3 inches and the last 2 have been a lot slower. 2) They all can move pretty fast when necessary but I did notice a huge difference between Dozer and my Pterinopelma sazimai! That one bolts around it's enclosure and it's kinda hard to track. I couldn't deal with a teleporter like a poecilotheria. 3) Dozer is by far my best eater. Unless he's in premoult he eats all the time. I don't think I've even see a lead up fast either. He may not be the norm though.
