I wouldn't keep it on straight sphagnum moss but u can mix it with other substrates like soil, peat moss, or eco earth. And the size of your enclosure should be fine also.
I would go larger or you'll be rehousing again very soon. I have my roughly 1" p. Met in a 32 Oz deli cup with about an inch of substrate and a chunk of cork with a some small fake leaves
I would remove all heat sources and let the substrate dry out if it's moist and give it options for hiding also. As long as your comfortable in your home the T should be as well. I wouldn't worry about the humidity in the tank. Just needs access to a small water dish.
Give it some fake plants or twigs to build a web with and keep it dry. And also be very cautious so you don't get bit. There incredibly fast. Just leave it be for a few days to get settled into its home then try feeding again
I'd just let it be. It'll come out when it's ready. Just make sure it can still get a little drink. I had a avic metallic that was webbed in for nearly a month and everything was fine
I would keep it in a smaller enclosure for a while yet. Most people use a 10 gallon aquarium size tank for adults and at 2.3" I think that's a little large for such a small t. I would go with an intermediate sized enclosure for a while.
I'm sure others will chime in with what worked best for them.
You have many options for feeder roaches. It's going to be trial and error to see what your Ts will go after. I have some that won't touch a dubia but will go after nearly anything else.
Both are very cool looking Ts. The smithi is the classic must have. That was one one of my top to buy ts but there sloooow growing species. The Avic has great color as well. But care can be a little on the tricky side. Some have terrible luck with avics.
