I wouldn't worry about this at all. Its hard to tell from the photo, but it doesnt look like premolt based on the size of the abdomen. Some Ts just kick more than others. Genics are also well-known to be a little fiesty, so I wouldnt doubt it if its just getting angry at shadows and kicking at them.
Like whats said above, any T can burrow and hide itself for what seems like a lifetime. Grammastola in particular are very slow growers. Its not uncommon for smaller specimens to burrow themselves for months on end, larger even longer.
Can you post some pictures of the spider and enclosure? Ill be honest, it sounds like it may have gotten stuck in its molt. If that's the case, its most likely too late to intervene now.
