You have a mature male. He's reaching the end of his life. He won't be interested in webbing, eating, etc. because he literally has one thing on his mind: mating.
I'm looking for the following:
Mature Males (for loan or purchase):
Brachypelma smithi
E. sp. Red
H. vonwirthi/C. paganus
Pamphobeteus sp. insignis
Mature OR penultimate male:
Brachypelma baumgarteni
Mature females:
T. ockerti
Augacephalus. ezendami

Aphonopelma seemanni blue...
Just a word of advice/caution: Solpugids don't do well in captivity. They're best left in the wild (and I say this as someone who has many a kidnapped-from-the-wild arachnid in my house).
Glad you found her! I had a 4" A. hentzi female take advantage of me *leaving the lid totally off like a dolt* and she went down a 4' tall dresser, across the bedroom, and hid under a bad in the closet. I'm shocked she made it down that dresser without injury.
Now THAT is nightmare inducing...
I've had two calm MMs, and that was an Aphonopelma hentzi and - I could hardly believe it - an A. geniculata. The other MMs I've had, such as P. irminia, P. cambridgei, A. ezendami, and K. brunnipes, were all much more defensive and prone to trying to bolt after maturing.
Totally normal for a MM to not eat, or eat very little. They have one thing on their mind: Mating. This is also why they can appear to be more defensive, and are more prone to try an escape the enclosure.
I would put him in a plastic enclosure with ventilation holes on the top and sides. The mason jar isn't going to give him enough ventilation. Pretty much any cheap plastic food storage container will work as a tarantula home. I get mine at Dollar Tree for, yep, $1 :)
