My Chaco golden knee has mostly been a couch potato for two years. It just molted, sprouted much longer legs, and now moves super quick. Is this an “adolescent” phase?

After a molt you get a completley 'new' spider.
They can change for a friendly giant to a hysteric idiot :)
Or it could be a mature male now (because the longer legs remark)

Can confirm. My A. chalcodes went from being a chow-hound to living off air post-molt.

My T. albopilosus is in what I refer to as it's teenager phase. It stays in its burrow 99.9% of the time. If you drop food in front of the hole, it snatches it and returns to its room. That is, when it hasn't blocked the door shut. Probably in there playing video games all day.
