Since I've been looking for my second T, I have been seeing a lot that say 2nd Instar, 3rd Instar, etc. in the descriptions.
What exactly is this?

I think it means how many times they have moulted, how big they are. Not a 100% though. Sorry, I'm new to the hobby too

Yes, a 1st instar has moulted once since hatching so a 3rd instar will have moulted 3 times. It is a rough guide to size although species vary so you could get a 1st instar varying between 0.25" to 0.5".
